English mustard
I'm a great fan of English mustard, but note that some brands seem to have downscaled their heat and added vinegar in recent years. I've tried making it using Coleman's powder, but this often produces a slightly bitter taste.

Can anyone recommend a really good - and, most importantly, a really hot - brand of English mustard?

Isn't English mustard really Chinese mustard? They seem to be very similar to each other.

As a connosser of all things hot I am happy to give all you igorameses the benefit of my years of mustard know-how.

There is a place for all mustards.

English is for roast beef, bangers, pork pies, steak and kidney pud/pie etc.

French, in other words Dijon, is for steak, magret de canard, and ham and cheese baguettes.

Kraut mustard is for kraut bangers. That's it.

French's, yes the Yank stuff, burgers and hot dogs.

There you go, that's how it works.

And there's nothing wrong with Colemans. By the way, if you're mixing the powder but find it bitter, try using milk.

Currently in the Spaniards inn in Hampstead and the mustard here is so fucking strong I had to report it. Tracklements strong English mustard. Fuck.

I don't have a problem with Colemans as long as its fresh. You should always check the BBF date when buying it, because it looses it potency very quickly. I have generally found you need 8 months before its BBF date to get a decent kick

English mustard must always be made from mystard flour, never bought ready made in a jar. Although Colemans is very common that doesn't mean its flour isn't superb. Go to the shop in Norwich and stock up on mustardy things, it's a good city for pubs too. If you fancy trying something else, I recommend Butler's Grove Elizabethan Gunpowder Mustard Flour.
